Yogurt berry parfait with homemade granola

Ingredients

Yoghurt Berry Parfait

  • 1 cup yogurt, (I used So Delicious Dairy Free Raspberry Coconut Milk Yogurt)

  • blueberries

  • raspberries

  • blackberries

  • homemade granola, (recipe below)

  • unsweetened shredded coconut flakes

  • 1 tsp maple syrup, (optional)

Homemade Granola

  • 3 cups oats

  • 1 cup raw almonds

  • 1/2 cup raw pumpkin seeds

  • 1 tbsp cinnamon

  • pinch salt

  • 1/4 cup grapeseed oil, (may use coconut oil instead)

  • 1 tsp pure vanilla extract

  • 1/4 cup maple syrup

Instructions

Granola

  1. Preheat your oven to 350 degrees

  2. In a large bowl mix together all the dry ingredients, then add the wet ingredients. Stir to combine well

  3. Pour out onto a baking sheet lined with parchment paper and bake for about 20 minutes

  4. **NOTE: Toss it a couple times and keep an eye on it, it may burn easily

Yogurt Berry Parfait

1. Place your yogurt into a cup, bowl or plate (whatever you prefer) and top with granola + berries + coconut and maple syrup if using.

Notes

** I don't give specific measurements for the toppings because that's the fun of it! Add as much or as little as you'd like 🙂
