Savoury Rainbow Greek Yoghurt Breakfast Bowl

This Greek yoghurt bowl is full of probiotics, fibre, antioxidants and healthy fats - a perfect and filling breakfast option to start your day!

Ingredients (serves 1):

  • 1 cup full-fat Greek yoghurt (all-natural, unsweetened)

  • ½ cup grated carrot

  • ½ cup grated beetroot

  • ¼ cup finely chopped cucumber

  • ½ small avocado, sliced

  • 1 tbsp chopped fresh herbs (parsley, mint, or coriander)

  • 1 tbsp lemon juice

  • ½ tsp cumin powder (optional, for flavour and digestion)

  • 1 tbsp pumpkin seeds or hemp seeds

  • 1 tbsp extra virgin olive oil (or a drizzle of tahini)

  • Pinch of salt and pepper to taste

Toppings (optional)

  • Microgreens or sprouts for extra nutrients

  • Chopped walnuts or almonds for crunch

  • Poached egg (if you want extra protein)

Method:

  1. In a bowl, mix the Greek yoghurt with lemon juice, cumin, salt, and pepper.

  2. Arrange the grated carrot, beetroot, cucumber, and avocado on top in sections for a colourful presentation.

  3. Sprinkle with chopped herbs, seeds, and a drizzle of olive oil or tahini.

  4. Add microgreens, nuts, or a poached egg if desired.

  5. Mix together before eating or enjoy in layers for different flavours in each bite!
